Acapulco Chicken
Ingredients
6 chicken breasts, cut into strips
Salt and pepper to taste
1 teaspoon cumin
2 tablespoons extra virgin olive oil
1 cup salsa
½ cup cilantro, fresh chopped
½ lime, juiced
8 oz Mexican mixed cheese, shredded
White Rice and Chicken broth.
Directions
Preheat oven to 375 degrees.
Rub salt, pepper and cumin into chicken strips. Add oil to a skillet and heat. Sear chicken strips until golden brown on both sides.
Place chicken strips into a 9X13 inch greased baking pan. Mix salsa, cilantro and lime juice together. Pour salsa mixture over the chicken. Bake for 20 minutes. Sprinkle cheese on top. Remove from oven when cheese is melted, about 5 minutes. Garnish with a piece of cilantro. Serves 6.
Serve with white rice cooked in chicken broth and frozen mixed vegetables and buttered flour tortillas. An easy dessert of chilled fruit with (yogurt and cinnamon mixed) topping.
