Irish Soda Bread

Irish Soda Bread has been a staple in Irish households since the mid 1800s. Due to it’s simplicity in ingredients as well as directions, it was an easy bread to bake and keep on hand. Although, there are many variations of soda bread, this is a more traditional version.

Ingredients

4 cups all-purpose flour
1 teaspoon salt
2 tablespoons sugar
1 ½ teaspoon baking soda
1 teaspoon baking powder
1 ¾ cup buttermilk

Directions

Preheat oven to 400 degrees.

In a large mixing bowl, combine the all-purpose flour, salt, sugar, baking soda and baking powder, sift together.

Pour in the buttermilk making a sticky dough. Roll the dough out onto a floured surface and knead gently until you can form a round form. Place the dough into a greased and floured cake pan. Cut a cross in the dough with a sharp knife. Cover with another cake pan and bake in the preheated oven for 30 minutes. Remove the top cake pan and bake an additional 15 minutes in a 375 degree oven. Cool slightly before cutting into wedges or slices.

Variation: “Spotted Dog” is a variation of soda bread. Just add 1 to 1 ½ cups raisins and 5 tablespoons sugar to the recipe.
