4th of July Fruit Cobbler

What a great and easy dessert to serve for a backyard barbeque. If you’re going out to an Independence Day picnic or festival, make this in the late afternoon or evening to top off the day. This dessert can be made other times of the year with fresh peaches or nectarines as well as any kind of pie filling in place of the berry mixture.

Ingredients

2 cups biscuit mix
1 ¼ cups sugar
1 cup sliced strawberries
1 cup blueberries
1 cup raspberries
1 cup blackberries
2 tablespoon sugar

Directions

Preheat oven to 350 degrees.
Grease one 9” X 13” baking pan.
In a bowl, prepare biscuit mix per package directions for biscuits, but add 1 ¼ cup sugar. Spread batter into baking pan. Combine the strawberries, blueberries, raspberries and blackberries in a bowl, and mix. Pour the berry mixture over the sweetened biscuit batter in the baking pan. Sprinkle with 2 tablespoons of sugar. Bake 50 to 60 minutes, until biscuit batter is golden brown. Serve with a scoop of vanilla ice cream or whip cream. Serves 8.
