Quick Chicken Fajitas

Quick Chicken Fajita
Ingredients
3 tablespoons extra virgin olive oil
2 chicken breasts (or left over chicken)
1 yellow onion, chopped
1 green bell pepper, chopped
1 can whole kernel corn, drained
1 packet chicken fajita seasoning
1 cup salsa
3 cups water
1 ½ cup rice
1 tomato, chopped
Salt and pepper to taste
Sprinkle of Mexican mix shredded cheese
Directions
In a large skillet, heat olive oil on medium heat. Slice chicken into strips and sauté with onion, bell pepper and corn until onion is tender. Add fajita seasoning, salsa and water turning up heat. When boiling, remove chicken and add rice, return to boil. Turn heat down to low and cover, cook for 20 minutes or until rice is almost tender. Add tomatoes. Stir rice mixture adding salt and pepper to taste. Turn off heat. Place chicken on top and recover for 5 minutes.
Remove chicken. Spoon rice mixture onto serving plate, top with chicken, sprinkle with cheese while still hot. Serves 6
Serve with heated and buttered flour tortillas. Fold each tortilla in quarters and place in a cloth napkin lined basket.
Cinnamon Apple Compote
Ingredients
4 to 5 apples, chopped
2 tablespoons lemon juice
2 tablespoons brown Sugar
1 tablespoon cinnamon
2 containers vanilla yogurt
Directions
Place chopped apples in a large mixing bowl, drizzle with lemon juice and mix to coat. Add brown sugar and cinnamon, mix to coat. Pour in yogurt and combine. Spoon Apple Compote into dessert dishes or stemmed glasses and sprinkle with cinnamon to garnish.
Apple Freeze
Ingredients
8 cups apple juice
1 tablespoon cinnamon
4 cups ice
Directions
Place all ingredients in the blender and process until slushy. Pour into chilled glasses and serve immediately. Serves 6.
