Simple Summer Menu – Chicken Taco Salad

Menu: Chicken Taco Salad
Cranberry Smoothie
Pineapple Mousse

Chicken Taco Salad

Ingredients

2 tablespoons oil
2 half skinless chicken breasts, cooked and chopped
1 yellow onion
½ cup BBQ sauce
½ cup ranch dressing
1 packet taco seasoning
3 cups lettuce, shredded
3 tomatoes, chopped
1 orange bell pepper, chopped
1 cucumber, peeled and chopped
8 oz cheddar cheese, shredded
Tortilla chips

Directions

In a skillet, place oil, chicken and onion, heat until onion is just tender. Set aside.
For dressing combine the BBQ sauce, ranch dressing and taco seasoning, whisk and set aside. In a large bowl, combine the lettuce, tomatoes, bell pepper, cucumber and cheese, toss. Place lettuce mixture on salad plates, spoon chicken mixture on top. Drizzle dressing over top. Garnish with several tortilla chips on the side. Place the remaining tortilla chips in a cloth napkin lined basket and set on the table for extra munching. Serves 4 to 6.

Note: Try using Doritos Quest chips. They have a wonderful lime flavor that goes perfect with this salad.

Cranberry Smoothie

Ingredients

1 (12 oz) frozen cranberry juice, condensed
1 (12 oz) frozen pineapple juice, condensed
¼ cup vanilla yogurt
5 cups water
5 cups ice

Directions

Pour all ingredients into a blender and process. Serve in chilled glasses. Serves 6 to 12.

Pineapple Mousse

Ingredients

1 (12 oz) containers Cool Whip
1 (14 oz) can sweetened condensed milk
¼ cup lemon juice
½ cup pineapple juice

Directions

In a bowl, combine Cool Whip and condensed milk, beat. Add juices and blend. Serve in chilled wine glasses with a dollop of Cool Whip as garnish or fresh pineapple slice on glass rim. Serves 6.
