Simple Summer Menu - Temptation Tortellini Salad

Delicious filling salad with warm Garlic Italian bread and a light dessert. Serve with ice tea or a nice wine - a white Zinfandel would be perfect.

Temptation Tortellini Salad

Ingredients

2 (9 oz) packages cheese tortellini
1 jar artichoke hearts with oil
1 cup prepared pesto
1 pound baby mixed greens
1 cucumber, diced
3 roma tomatoes, chopped
½ cup red onion, chopped
¼ cup Parmesan cheese, grated
6 eggs, boiled and chill (peel and slice)

Directions

Prepare tortellini according to package directions. Drain, rinse with cold water and chill 2 hours in refrigerator.
In a large bowl, combine tortellini, artichoke hearts and pesto. Mix to coat tortellini.
Add baby greens, cucumber, tomatoes, red onion and Parmesan cheese, toss.
Garnish with slices of egg. Serves 6 to 8.

Garlic Italian Bread

Choose a loaf of either French or Italian bread, slice in half lengthwise. In a bowl combine a cube of butter and 2 crushed garlic cloves (or garlic powder). If you like you can heat this in the microwave to soften the butter.
Spread onto the bread and place both halves face up on a baking sheet. Sprinkle with Parmesan cheese and broil until toasty golden brown.
Cut into slices and place into a cloth napkin lined basket.

Easy Mint Mousse

Ingredients

1 (6 oz ) package regular chocolate pudding
Milk for pudding
1 cup Junior Mints
1 (8 oz) container Cool Whip

Directions

Prepare pudding according to package directions, while stirring add junior mints to melt in the pudding. Refrigerate until cooled. Fold in Cool Whip, saving some for garnish. Divide pudding mixture into wine or parfait glasses and garnish with a dollop of Cool Whip. Refrigerate until it’s time to serve. Serves 6 to 8.
