Garden Fresh Smoothie
There’s nothing like preparing a recipe with vegetables fresh from your garden. Even if you don’t have a garden of your own, this smoothie can be enjoyed anytime of the day.
Ingredients
½ cup carrot juice
1 lb tomatoes, chopped
4 celery stalks, trimmed and sliced
4 stalks green onions, chopped
1 chili pepper, chopped
Fresh ground pepper
Directions
You may use prepared carrot juice or steam carrots until just tender and then process them in the blender. Add tomatoes, celery, chili pepper and ground pepper to taste. Blend well.
Pour the mixture into chilled glasses. Garnish with celery stalks or green olives skewed on a wooded toothpick. Serves 3-4
This healthy drink is the perfect cocktail to replace or as a second choice to alcoholic beverages. And, a perfect compliment to a meal of grilled salmon or other fish, fresh almond string beans with garlic red potatoes.
